340g ripe bananas
220g sugar
1 egg
125g vegetable oil
1tstp vanilla extract/essence
2 cups flour
35g rolled oats, ground chunky
1tsp baking soda
1tsp salt
All done by hand, no electric mixer required!
Above: manually mash bananas and mixed well with sugar, add in the egg when the sugar is disolved. Add the vanilla - mix well. Add in the oil. Blend well.
Fold in the flour mixture of flour, oats, baking soda and salt - gently!
Ladle spoonful into 12cup muffin pan. Bake for 20mins or until golden brown and toothpick comes out clean!
