#1 with VVVanilla ~ No Bake Cheesecale

 My very first no bake cheesecake!


For Crust:
120g Digestive Biscuits
90g Butter, melted

Processed or crush biscuits til fine crumbs. Add melted butter and mix well.  Line bottom of pan and up the sides too with crumb mixture.  Put in fridge to cool and firm up for 15mins.

For Filling:
250g Cream Cheese, soften
1 tin Condensed Milk
1/3 cup Lemon Juice (yellow ones and NOT GREEN LIMES)
1/2 tsp Vanilla Essence
1 tin of fruit cocktail (discard the syrup)
1 tablespoon gelatine powder desolved in 2 tablespoons hot water

While the biscuit crust is cooling down in the fridge, cream soften cream cheese till smooth, add condensed milk, blend well together. Add VVVanilla and blend well. Add lemon juice, blend well.  Add gelatine solution, blend together well.  Fold in drained fruit cocktail by hand, mix well.  Pour carefully over the crust base and smooth the top with spoon.  Chill in fridge for a minimum 4 hours or BEST over night.

not used condense/evaporated milk with cheesecake before, always cream - how did it taste?

Go ask BentoPet what she is making with her red pot! otherwise she may just be displaying it!

condensed milk in cheesecake... surprisingly ok but must have the lemon juice otherwise the condensed milk will be overpowering the cheese!
