FFwD: Salmon Rillettes

Snack or sandwich filling!

Enjoyed making this up
the smoked salmon added lightness
to the flaked poached salmon
I used finely chopped red onions instead of scallions
and juice of one whole lemon
lunch:
salmon rillettes with
rice crackers, green apples and pickled ginger
with mini manhatten cheesecake
and chinese tea!
and of course I followed up
with a sandwich with the salman rillettes filling!
not on a diet!

  1. Why, Emily, I was just charging along, reading and enjoying your Post before getting to the Link about an interesting Post. So, of course I clicked on the Link and it was ME. Thank you. Thank you. I never know if what I write is good or just silly. This week you and Andrea have inspired me to "keep on truckin' " (a Midwestern expression.) Ironically, I finished off my remaining Salmon Rillettes with rice crackers also and liked that combo. I also used a red onion because I wanted the color. Again, merci beaucoup. I am inspired by everyone in this group also.

  6. Mini Manhattan Cheesecake?! That sounds delicious. Pickled ginger also sounds like a great addition to your lunch spread.
