THB #11 ~ Banana, Macadamia Nut, And Coconut Coffee Cake

We at The Home Bakers organised by Joyce
are baking our 11th recipe of the 60 in
Lou Seibert Pappas'
"Coffee Cakes ~ sweet, simple and savory"

I remembered the oil in the nick of time! 
 Above: wet and dry ingredients with my added touch - 
1/2 cup of frozen cranberries! 
and reducing sugar to 1/2cup too!
and oh! I used yogurt instead of sour cream....
and omitted the rum...
 Above: shredded coconut
 Above: cranberries
sprinkle the chopped macadamia nuts evenly on top
then topped with the brown sugar with cinnamon powder
 
 needed to bake them for longer than 35mins ~ an extra 5mins!
 a good rise!
 I am happy that I added the cranberries
firstly for a pop of color and for favour!
Absolutely tender!

    Love the addition of the cranberries, really does give it that POP of colour. I have a quite a few red currents in my freezer so this has given me the idea to use these up.

    your blender is so huge compared to mine and your mix looks like it's just perfect for your blender. It is a great way also to add cranberries, didn't think of it. Love the colours in your cake :)
