I like your idea of eating this cake toasted with sandwich spread... We had ours like lunchbox muffins and some dipped with soup as appetizer.

Hi Emily,
Your polenta cake looks great baked in a bundt pan, love the golden colour! Eating it with sandwich spread is a wonderful idea, I never thought of that! I toasted it and munch on it plain, which is quite addictive on its own!

I think this cake looks even nicer in the ring mold. Using savory spreads is a good addition.

Hi Emily,
Your cake looks great!! I've never baked a cake with polenta so this will be a 1st and I love the idea of toasting it - good for breakfast. I'm always in a rush in the morning so I plan to bake this on a Sunday and then have the cake slices toasted throughout the week.
