CtBF~MPK: French Onion Soup

We hardly eat beef at home hence it was chicken stock I used for the base  of this soup.  Made enough for two  large servings which made a hearty dinner!
This dish took quite a while to make, so was a bit rushed at the end (with hubby already sitting down at the dining table, with a puzzled look on his face - where is the rest of my dinner?). Hence only managed to pop the soup into oven to melt the grated cheese.
 
Paired with crispy skin salmon, and smashed potatoes with a (very) green dressing!
