CC#36: Quick stovetop ratatouille

I had to substitute local cucumber (deseeded) for zucchini, coriander for basil, added a big pinch of za'atah, just because I need to use it! Very important to start this recipe off on the right note - pre-cooked (or rather 'brown') separately the eggplant, and the zucchini /cucumber. Then follow up with the other steps.
This was delicious! Hubby's dinner was poached sole fillet over simple mash, topped with the ratatouille.
