Thinly slice your apple of choice ie from one side until you reach the core, then continue slicing from the other side till you reach the core again; continue with the remaining two sides which now will give you rectangular slices. Drizzling with freshly squeezed lemon juice. Peel and slice thinly your choice of kiwi fruit (I choose the yellow kiwi). Arrange the apple slices on the serving plate, continue with the sliced kiwi, Finely chop fresh tarragon and scatter on top of the kiwi and apple slices, drizzle with olive oil, season with salt and pepper. An excellent starter (a savory version).
You may opt to make this a sweet salad, skip the olive oil, salt and pepper. Squeeze lemon juice over the fruit and sprinkle with a little sugar or trickle over some mild flavored honey. Tarragon will still be nice with the sweet version, but you may use chopped mint and basil.
