Spinach & mushroom tortilla ~ pages 146-147

Spanish olive oil, finely chopped shallots

sliced mushrooms, homegrown Brazilian spinach - leaves only,

salt and pepper, toasted flaked almonds

three eggs -beated with a splash of water

with chopped coriander

grated Parmesan cheese

I pre-cooked the mushroom and spinach filling

and transfer portions of it into my mini egg pan to finish off 

the grilling with the cheese in the toaster oven

pan fried salmon with chili and tomato sauce
