Free & Easy Bake Along #19 ~ Poppy Seed Cake

I choose to bake muffins for easy transportation and no slicing needed!
This will be my 2nd ever baking experience with Poppy Seeds ~ Crunchy Lemon Poppyseed Muffins, a recipe from All Things Nice with Jo Seagar from NZ, visit Jo's website HERE! ~ gifted me by my lil Sister!
NOTE:  The quantity of sugar used is less than Jo's original recipe cos my DH is watching his sugar intake.
Above: Whisk together 2 cups self-raising flour, half cup castor sugar, half cup poppyseeds, fine grated rind of 2 lemons ~ below: the end results
 Using another bowl, I whisked together 3 medium sized eggs, 100g butter ~ melted and 1 cup milk
 I made a well in the dry ingredients and slowly add the liquid ingredients in it and carefully fold the wet ingredients into the dry trying not to overmix but make sure that no streaks of flour are left and the poppyseeds well distributed!
 spooned into greased muffins pan and bake for 10-15 minutes in a 200degC oven.
while the muffins are baking, I dunk 1/4 cup golden castor sugar into lemon juice of half a lemon, stirr together but do not dissolve the sugar.
 Brush the tops of the muffins with this sugar and lemon mix as soon as the muffins are out of the pan, cool on wire rack
Though the color is abit pale on top (not golden like Jo's) but darn good muffins these ARE!

Muffins, how delightful! Yes, definitely easier to eat, no need to wash any plates or knife! I have not heard of Jo Seagar, will find out more about her right after this!

i saw your previous bake with poppyseed, we have that 'cake keeper book' too, infact we will be baking one or 2 recipes from that book soon, hope you can join along as well. making them in muffins is sure a good idea!
