Gf commented that this dish looked better than both our chicken dishes we had for girls day out the day before!
Chicken fillets was dipped in beaten egg, then coated with bread crumb, flour and chopped toasted pistachios; then pan fried. Topped with mozzarella, grilled. Served over cherry and anchovies salsa and Serrano ham.
