I scaled down the ingredients for half a cooked beetroot,
served with baked flat bread (store bought)
and as suggested, as a sandwich, well open sandwich that is!
the beetroot walnut hummus tasted pretty good I must say.
This will tide me over while I decided what to order to go
with my pint of light ale at the pub!

That looks so good. I'd happily eat that whole bowl myself with the flat breads.
I love beets. A beet hummus sounds sweet and delicious.
What a colorful and unusual hummus, and the combination of beet and walnuts is perfect.

Such a fun and pretty recipe. I just absolutely love the color of this hummus and would be so pleased to enjoy some with a drink in my hand!
