The Cake Slice Bakers ~ August's Carrot Cake

Sorry, TCS members, I am late in baking and posting August's cake!
But here we are!
I made the full recipe for the carrot cake,
but half the recipe for the cream cheese frosting
See, I did bake three round cakes, only small ones - 4.5" diameter!
and I thought I would have enough batter for a sheet cake
but evidently no.... so folded up the excess paper
and use the only suitable size barriers - ramekins!
ain't I clever!
I frosted one of the small round cakes and two slabs of
the sheet cake to make a two-layer rectangle cake.
Chopped some toasted walnuts for garnishing the round cake.
A healthy carrot cake with loads of carrots, walnuts and
mixed color raisins
(I did use only 1 cup of soft brown sugar instead
of 1 cup each of brown and white)
ps:  I added grated zest and juice of one lime to the cheese frosting.

Super idea to add lime to the frosting...and to reduce the sugar. Your cake look lovely and I'll bet it was delicious!

I love that you added some lime to the frosting. I bet that made it pop in your mouth. Perfect. I love a great carrot cake.
