BakeAlong #31 ~ Whoopie Pie ~ Pumpkin

I baked Pumpkin Whoopie Pies with Lemon Cream Cheese filling
Above: in front and at the back are the large pumpkin pies
franked by two smaller pumpkin with chocolate chips version

My changes in RED
BATTER:

2 cups Bisquick (replaced with cake flour)
1 cup dark brown sugar, firmly packed (2/3 cup)
1 tablespoon pumpkin pie spice (replaced with kuih lapis spice + 1 tsp ground cinnamon)
1 cup pumpkin puree (homemade)
1/3 cup vegetable oil (150g butter at room temp)
2 eggs
1 teaspoon vanilla
(enough milk to mix)

FILLING:
1/4 cup butter, softened (1/2 cup)
1/2 cup light cream cheese, softened (1 cup philly)
1 1/4 cups powdered sugar (1 cup icing sugar)
1 tsp vanilla (replaced with 1 tablespoon of lemon curd)

Pumpkin whoopie pies with lemon cream cheese filling sounds delicious! This is the second pumpkin whoopie pie I've seen. I wanted to make a pumpkin version too, but used my last batch of pumpkin puree for ice cream. Need to make a new batch, to freeze for yummies like this!
