Wicked Welsh Rarebit ~ Jamie Oliver

This is my 2nd post for Zoe's Cook Like A Star Blog Hop:
recipe on pg 322-323 of 'Jamie at Home'
titled welsh rarebit with attitude and wicked welsh rarebit from his website

Jamie Oliver's Wicked Welsh Rarebit!
2 thick slices of white bread (of course I used Lena's multigrain bread)
1 egg yolk
3 heaped tbsp creme fraiche (I used heavy cream with a good squeeze of lemon juice)
1/2 tsp mustard
sea salt and fresh ground black pepper
50g mature Cheddar cheese, freshly grated (I used Parmesan)
2 tbsp onion marmalade or chili jam (I used cili sauce)
worchestershire sauce (I used balsamic vinegar)

Toast the bread on both sides in the hot oven until golden, then transfer to a baking tray. Meanwhile, mix the egg and creme fraiche together, then add the mustard powder and mix again. Season with salt and pepper, then stir through the grated cheese.

Spread each slice of bread with a good layer of onion marmalade or chili jam, right up to the edges.  Divide the cheese mixture between the slices and spread this out to the edges too.  Pop the slices back in the oven for about 5 minutes and bake until the cheese is browned and bubbling. Keep an eye on them and rotate the tray for even cooking.

Cut a criss-cross pattern on top o the cheese with a knife and drizzle a bit of worcestershire sauce into it for an extra kick.  Delicious served with some dressed salad leaves.

I made this in the toaster oven (though if I make this again - will forego the first step of toasting the bread till golden as I slice my bread rather thin and don't take double cooking that well!).  Served this with pan seared thick cut tomatoes and wilted greens.
