CtBF~ED: Sweet Chili Chicken Thigh(s)

As hubby do not eat spicy food, this was for me.  I only used one deboned thigh, but left the skin on. The only ingredients I had to buy were the Thai sweet chili sauce, and the Sriracha.
I did simplified the steps, but it still turned out as simple, but delicious.  I probably will make this dish again (how else will I finish off the balance of the chili sauces I bought!).
I paired it with white Jasmine fragrance rice.
Dorie has provided a recipe option using pork tenderloin too.  Will explore this option when the wet market resumes business after the Chinese New Year holidays.

  3. I am with you on testing this with the pork next time (we all have a stockpile of that amazing Thai Chili sauce and Sriracha lol). So glad that you got to enjoy this even if hubby was not about to test the heat. Your plating looks fabulous and I love the idea of the jasmine rice.

  5. I skipped the sriracha as I am not a spicy food girl. My husband is but doesn't like sriracha either! I am excited to try this with pork as well!

  7. This is a winning recipe with its many adaptations. Chicken or pork, there are no bad choices. The sauce is so delicious. It carries the day.

  8. Emily, I think you could cut back on the spice and still make this a delicious dish that your hubby would like. Like Karen, I'm not a Spicy Girl so just left the spice out while making the sauce. This is too tasty and simple a recipe not to be able to share. What is the "wet market?" My daughter is with me in London for a week and today we went to Chinatown for the New Years celebration. It was crazy-crowded but fun. I also want to try it with pork. Why wouldn't this work well with pork chops?

  9. We reduced the sriracha due to the short, noisy person who lives in our house. She loved the chicken (even as she was sick), so I think it's just fine without it! Looks great!

  10. I'd like to try this with the pork tenderloin too. I loved how it only needed simple sides since the chicken and its sauce offered so many flavors.
