CtBF~MPK: Non-cake but a catch-up post

While the other CtBF members are baking a bay leaf pound cake, I am posting the tasty results of a chicken pot parmentier they made earlier!
Original recipe serves 6-8, but I scaled down the recipe for two using one whole chicken leg, skinned and deboned. I had enough filling for two large ramekins, and one small.
My potato topping had one egg yolk, no cream, no nutmeg but still tasty!
One dinner took care of the two larger pies, and hubby had the small serving with a simple salad for next day's lunch.  Verdict ~ a repeat recipe!

  1. Isn't this a terrific recipe? I think it's one of my favourites from this book (and there are a lot of great recipes).
